It opens with clean notes of cut straw and white meadow flowers, before taking a slightly unusual turn into savoury plantain chips. The American white oak influence is undeniable, bringing a generous wave of desiccated coconut and rich, creamy vanilla. As the spirit breathes, it settles into a nostalgic, sweet note of an open tin of fruit salad. Palate: The arrival is bright, playful, and wonderfully varied. It kicks off with a burst of fruity jumbo jelly beans, which is quickly cut through by a remarkably crisp, ozone-like mineral edge – reminiscent of the air just before a lightning strike. Sharp grapefruit slices and warming, clove-studded pears develop next, before the palate shifts gears into a complex, bitter-green territory defined by fresh chickweed, earthy cavolo nero, and tart gooseberries. Finish: Long and full of life. It keeps you on your toes with sudden, juicy bursts of fruit, before finally grounding out on a clean, dry, and pleasantly bitter note at the far end of the grassy scale. Non-chill filtered and natural colour. This spirit may haze at low temperatures and under dilution.
