Decadent Drinks: This one caught us slightly off guard. We weren’t expecting fireworks when we revisited this small parcel of 2006 Knockdhu. A few refill casks, quietly doing their thing, nothing shouting for attention. But this particular barrel had other ideas. Heavily peated Knockdhu isn’t something you stumble across every day, and after two decades in refill wood it’s landed in a very specific, very satisfying place. The peat has softened and thickened, becoming creamy, waxy and full of character rather than sharp or aggressive. There’s a proper weight to it. Fatty smoke, honeyed sweetness, a slightly resinous edge, and that lovely old-peat profile that only really appears once enough time has passed and everything starts to knit together. It’s not loud. It’s not trying to be anything other than what it is. But it turns out, what it is… is very good indeed.
