I’ve found that the spirit that runs from Tomatin’s beautifully bulbous copper pot stills seems capable of ageing well in any kind of cask. This example from a single, fresh, ex-Pedro Ximenez cask takes the classic Tomatin notes of orchard fruit and malty tea and overlays them with dried brown fruits, spices and enervating touches of freshly ground coffee.
